Southern Hash Goodness.
Tonight's meal (Potato and Zucchini hash) comes from a recipe from Local Fare. It was quick and easy. I thinly sliced some red potatoes, garlic, and onion, and sauteed in olive oil for about fifteen minutes. I cracked some salt and pepper as they sauteed.
Then I added some organic zucchini and tomatoes. It tasted a little bland, so I added in some season salt.
After about seven more minutes, it was ready. Served with a fried (nearly scrambled - used the wrong pan for frying) egg. Good for breakfast or dinner!
