A healthy, vegan night!
This meal was made out of my aging produce from last week's delivery! I've not been the best at economizing my vegetables lately. Bok choy slaw with cranberries and apples (no carrots, as I despise them so), caramelized onion and squash over quinoa (my substitution for couscous), and sauteed spinach.
The two former healthy and delicious recipes come from Local Fare, followed to the "T."
As for the spinach, I first sauteed some garlic in olive oil, until fragrant but not browned. Then I added in the spinach, and stirred to coat. I covered the pan for about a minute - any longer would have cooked the spinach down to nothing! Then I topped with some lemon juice and pine nuts. Delicious.
